Recipe chosen: Beef and Spinach Stir-fry
Ingredients:
- 500g beef (rump or sirloin preferably) cut into strips
- 1/4 cup sweet chili sauce
- 2 tbsp soy sauce
- 1 clove garlic, crushed
- 2 tsp grated ginger
- 1 tbsp sherry
- 2 onions, chopped
- 500g english spinach leaves (I used chard as there was lots growing in the garden)
Procedure:
- Combine steak with everything except onions and spinach. (I added a tbsp fish sauce here for extra flavour) Leave to marinate for at least an hour.
- Heat wok until very hot, with a tablespoon oil. Stir fry meat in batches until well-browned, then remove from wok.
- Stir fry onions until softened, then return meat to wok. Once hot through, add spinach and stir fry until wilted.
- Serve with rice or noodles.
The Verdict: Turned out quite well. I chose the recipe since I felt like a stirfry but didn’t have any Asian greens. I think I prefer the usual bok choy, but the spinach is an acceptable substitute.
