SPC #4 – Iced by Murdoch Books

Recipe chosen: Watermelon and Rosewater Ice

Ingredients:

  • Ikg watermelon, rind removed
  • 2 tsp lime juice
  • 60g caster sugar
  • 60ml citrus vodka (I used Cointreau instead)
  • 2 tsp rosewater

Procedure:

  1. Chop watermelon, removing seeds.
  2. Blitz in food processor or blender with other ingredients.
  3. Strain through sieve into freezer tray.
  4. Freeze, stirring every hour or two.

Makes about a litre.

The Verdict: Nice taste, subtly sweet. Quite icy though, rather than the sorbet consistency I was expecting – probably all the water content in the watermelon. Refreshing!
